Character, memory and care – these are the ingredients of the cooking of Pino Cuttaia, a chef who grew up in Piedmont but in 2000 returned with his wife Loredana to Licata, on his native Sicily, to open a restaurant of his own, La Madia. Here he will allow his dishes to speak, without rhetoric, about the island as he remembers it.
